Asado (Peruvian Roast Beef) – A Dish For Two Seasons

Unless you’re in the Southern Hemisphere, you probably think I’m out of my mind to give you a recipe for asado (roast beef), a dish that everyone knows needs a long cooking time, and that is particularly tedious to make in this hot weather. What we all need is something refreshing, I know. But if you just open your mind a little bit, you will realize that with this delicious asado, you can make wonderful cold food, like sandwiches and salads, perfect for these hot days. To prove my point I will tell you that many years ago, when my kids were still kids and I used to take them to the beach, I would always bring a big cooler full of cold asado sandwiches, triples, and fruits! And those were the best beach lunches I’ve ever had.

Asado is a classic and homey dish that is usually served with rice and mashed potatoes, and because of the type of meat used to make it, it needs a long cooking time in a flavorful broth made with wine and dried mushrooms. You may want to marinate the beef overnight to infuse it with more flavor, but that is only if you have the time to do it.

A key thing to remember when making asado, is that it needs to be very saucy, because that way you will have enough sauce to pour over the rice and the potatoes. A creamyLima bean puré is a great idea here, as well as polenta; but a crisp, green salad, is my first choice at this time of the year.

And now you know the most important part: if you have leftovers, sandwiches and salads are the way to go.

Ingredients
  • 3 tablespoons vegetable oil
  • 2 pounds Eye Round, with no fat
  • 1 big red onion, cut in six pieces
  • 3 tomatoes, cut in four pieces
  • 4 cloves of garlic
  • ¾ bottle red wine
  • 4 cups water
  • ⅓ cup soy sauce
  • 2 tablespoon Worcestershire sauce
  • 5 dried mushrooms
  • 1-3 tablespoon potato starch
  • Salt and pepper
Instructions
  1. Heat the oil in a heavy saucepan over high heat, add the meat and sear it, turning to form a golden crust all over.
  2. Add the onions, tomatos, and garlic, and stir until they start to release their juices.
  3. Meanwhile cover the dried mushrooms with 1 cup boiling water.
  4. Add half the bottle of wine, soy sauce, Worcestershire sauce, the dried mushrooms with soaking water, and the remaining water. Season with salt and pepper.
  5. Turn the heat to very low, cover with a tight fitting lid, and cook unisturbed for one hour.
  6. Take the beef out of the saucepan, drain well, put on a chopping board, and thinly slice it (about ¼ inch).
  7. Strain the vegetables and put the broth back in the saucepan. Add the remaining wine and more water if necessary.
  8. Put the slices back in the saucepan, and season with salt, pepper and more soy sauce.
  9. Continue cooking over low heat until the meat is soft, about one more hour.
  10. When the meat is ready dissolve the potato starch in 3 tablespoons water and gradually add it to the saucepan, stirring constantly with a wooden spoon until the sauce is thick enough to cover the spoon lightly. Maybe it's not necessary to use all the potato starch.
  11. Serve with rice and corn, a green salad, mashed potatoes or baked potatoes.

  2. This recipe looks fantastic. Do you think I can adapt it also for either a pressure cooker or the crock pot? I don’t have as much time to experiment with new recipes as I used to, but this is one I’d really like to try!

    • Maura, this is the perfect recipe for the crock pot or the pressure cooker. The meat will be incredibly tender, and you can freeze the leftovers, too.

    • Sí, en Argentina le llaman Peceto. En Perú es Asado de Pejerrey, pero le decimos Asado solamente. Se toma tu tiempo pero queda delicioso.

  8. ooh weel. i made roast (carne asada) last week and put a super special glaze on it. I love the browning process the best! I could eat right then! We serve ours with arroz congri and yucca. Soo terribly great!
