Choripan with Tropical Salsa

- Salsa:
- ½ cup red beans, cooked
- 2 tablespoons onion, diced
- 1 tomato, diced
- ½ avocado, diced
- ½ ripe plantain, peeled, fried and diced
- Salt and pepper
- Juice of 1 lime (or lemon)
- Cilantro leaves
- Sandwich:
- 2 sausages
- 1 Flatout Foldit
- Lettuce leaves
- Mustard
- Chili pepper sauce (optional)
- Mayonnaise (optional)
- Salsa:
- Combine the beans, onion, tomato, avocado, fried plantain, salt, pepper, lime juice and cilantro leaves. Reserve.
- Sandwich:
- Cook the sausages in a skillet or in the grill until cooked through.
- Put the Flatout Foldit in a plate, cover with a lettuce leaf, put the sausages on top.
- Drizzle with mustard or chili pepper sauce, top with the tropical salsa, fold the Flatbread and serve immediately.
