Mixto Tequeños - Two Cheese and Ham Tequeños with Guacamole

  • 18 wonton dough sheets
  • ½ cup sliced Oaxaca cheese
  • ½ cup sliced Manchego cheese
  • ½ cup sliced ham
  • 2 tablespoons chimichurri (optional)
  • ½ cup vegetable oil
  • Guacamole
  • Aji amarillo sauce*
  • Salsa
  • Refried black beans
  1. Put a wonton dough on the kitchen counter. Wet your fingertip with a little water and moist the edges of the wonton dough.
  2. Place a slice of Oaxaca cheese on one side of the square, top with a slice of ham and then a slice of Manchego. Spread a bit of chimichurri on the cheese.
  3. Roll each wonton dough like a jelly roll, beginning with the side of the filling. Press the two sides to seal and make as many tequeños as possible.
  4. Heat the vegetable oil in a saucepan and fry the tequeños until golden brown, (about two minutes per side). Drain on paper towels and serve immediately with the sauces of your choice.
