Lomo Saltado Risotto

Ingredients
  • ⅓ cup olive oil
  • ½ onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 cup Arborio rice
  • 1 cup white wine
  • 4 cups hot vegetable stock
  • Salt and pepper
  • 2 tablespoons butter
  • **Lomo Saltado
Instructions
  1. Heat the oil in a saucepan over medium heat. Add onion and garlic and cook, stirring occasionally until translucent.
  2. Add rice and continue stirring for 7 minutes.
  3. Add white wine, bring to a boil, and reduce the heat. When the liquid evaporates start adding ladlefuls of the simmering stock, stirring the rice until the stock is absorbed. Season with salt and pepper. Continue doing this until the rice is al dente.
  4. Finish with butter.
  5. In the meantime make the lomo saltado and have it ready in a covered pan.
  6. Serve a portion of risotto in each plate and top it with lomo saltado.
  7. Serve at once.
  8. Note: Garnish the dish with some thin fried potatoes (optional) for texture and decoration.
