Chicken sandwiches

  • 1 chicken breast or 4 chicken legs, cooked and shredded or chopped
  • ½ cup celery, finely chopped
  • 2 tablespoons raisins or dried cranberries
  • ½ cup mayonnaise (or to taste)
  • 1 tablespoon parsley, chopped
  • Salt and pepper
  • 6 mini rolls
  • Lettuce leaves
  • Grapes
  1. Cook the chicken with 1 sliced carrot, 1 celery stick and 1 bay leaf, salt and pepper. Cool and dice the meat or shred it finely.
  2. In a bowl, combine the chicken, chopped celery, raisins or dried cranberries, mayonnaise, parsley, salt, and pepper, until creamy. You may add some toasted and chopped pecans.
  3. Cut each mini roll in half, horizontally, put a lettuce leaf on the bottom side of the bread, and cover with the chicken salad.
  4. Serve with a green salad or some grapes.
