Peach Bread Pudding - Budin de Pan

Ingredients
  • 2 cups milk
  • 5 eggs
  • 1 ½ cups sugar
  • 1 teaspoon vanilla
  • 3 cups fresh Chancay bread, or any stale bread, cubed
  • 1 peach, finely sliced
  • Peach slices to garnish
  • Mint leaves to garnish
Instructions
  1. In a bowl combine milk, eggs, sugar, vanilla, and bread. Let rest for 30 minutes. Add the peach slices.
  2. Preheat the oven to 350F. Grease a round or rectangular baking pan. Pour the bread mixture into the pan and bake for 45 minutes or until puffed and golden brown.
  3. Serve warm or at room temperature. Garnish with peach slices and mint.
  4. Serve at once or add a scoop of ice cream, caramel sauce or custard.
