Dried corn Humitas (Humitas de Mote)

Ingredients
  • 250 grs mote (dried corn)
  • ½ - 1 cup oil
  • ½ - 1 cup sugar
  • ½ cup raisins
  • Corn husks
Instructions
  1. Soak the corn overnight.
  2. When ready to make the humitas, grind the corn in a food processor until a paste forms and it's as thin as you can get it.
  3. Mix sugar and oil into this paste, until you get a thick paste texture, and it's sweet enough for you.
  4. Add raisins into the mixture.
  5. Cover the base of a pan with shredded corn husks.
  6. Put 2 tablespoons of dough in the center of each husks, and wrap forming a rectangle.
  7. Put the humitas laying down in the pan, forming several layers.
  8. Cover everything with more shredded corn husks, and add some water to the pan (2 - 3 cups would be enough).
  9. Bring to a boil and cook, covered, at medium heat, for 25 minutes. Let cool for at least 10 minutes before serving.
