Ingredients
  • ¼ cup cooked corn
  • ¼ cup cooked carrot, diced
  • 1 tomato, seeded and diced
  • 1 cup cooked broccoli florets
  • 1 cup cooked potato, cubed
  • 4 lettuce leaves, shredded
  • 2-inch square extra firm tofu, cut in thin slices
  • Juice of 1 lime
  • 2 tablespoons olive oil
  • Salt and pepper
