Chocolate Mousse

Ingredients
  • 4 oz dark chocolate, chopped
  • 2 oz butter
  • 3 eggs, separated in whites and yolks
  • 1 tablespoon sugar
  • 1 tablespoon Pisco
  • To garnish:
  • Whipped cream
  • Cherries
  • Mint leaves
Instructions
  1. In a bowl over –not in- boiling water, melt the chocolate and the butter. Take off the heat and cool to room temperature. Reserve.
  2. In another bowl, beat the egg yolks with the sugar until pale and thick. Add to the melted chocolate and stir well to combine.
  3. In a clean bowl, beat the egg whites with a mixer at high speed until firm. Fold into the chocolate mixture. Add Pisco and pour into glasses.
  4. Put in the fridge for at least 4 hours or overnight.

  6. Use vanilla instead of Pisco.
  7. Grand Marnier, Kalhúa, Cognac, etc, will give a different flavor to the mousse.
  8. Garnish with whipped cream, cherries, and mint leaves.
