Cut passion fruit in half and scoop the pulp into a strainer over a bowl. Press with a spoon, to separate the juice from the seeds. Measure the juice –you should have 2 ounces- and discard the seeds.
Process Pisco, passion fruit juice, simple syrup and ice cubes in a blender. Serve in a glass.
**Note:
To make simple syrup, combine 1 cup sugar and 1 cup water in a saucepan. Bring to a boil, stirring until dissolved, and simmer for 5 minutes. Cool and store in a jar in the refrigerator. You may buy the commercial cane sugar syrup, if you wish.
