Bean and Pork Soup

Ingredients
  • • 3 tablespoons vegetable oil
  • • 1 pound pork leg cut in 2-inch pieces
  • • ½ white onion, chopped
  • • 1 garlic clove, chopped
  • • 1 tomato, peeled and chopped
  • • 1 teaspoon dry oregano
  • • 1 can Bush's Frijoles a la Mexicana, drained
  • • 1 Russet potato, peeled and diced
  • • 1 cup rigatoni pasta
  • • Salt and pepper to taste
  • • 2 tablespoons cilantro, chopped
  • • ½ cup grated Parmesan cheese
Instructions
  1. Heat the oil in a saucepan over medium heat and fry the pork until golden.
  2. Add onion and garlic, sauté until it is soft and translucent. Incorporate the tomato and oregano, stir for 3 minutes.
  3. Pour the beans into the pan and add 6 cups water. Bring to a boil and turn the heat to low, simmering for 25 minutes partially covered, or until the pork is tender.
  4. Add potatoes and pasta and simmer for 11 minutes. Season with salt and pepper.
  5. Turn the heat off and add the cilantro. Serve hot with a sprinkling of Parmesan cheese and toasted bread on the side..
