Healthy Plum Muffins

  • 1 cup almond meal
  • 1 cup rice flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup cooked quinoa
  • 1¼ cup almond milk
  • 1 teaspoon vanilla essence
  • ⅓ cup almond butter
  • ⅓ cup honey
  • 1 extra large egg
  • 1 cup Amaz!n Plums + 1 tablespoon
  1. Preheat the oven to 375°F. Line a 12 cup muffin tin with paper cups.
  2. Combine almond meal, rice flour, baking powder, and salt.
  3. In a small bowl combine quinoa, almond milk, and vanilla.
  4. In another bowl mix the almond butter, honey, and egg, using a wire whisk or a hand-held mixer. Stir in the quinoa mixture with a spatula.
  5. Add to the almond flour mixture, together with a cup of chopped plums.
  6. Pour the mixture into the muffin tins, filling up to two thirds of each paper cup. Sprinkle with the remaining plums.
  7. Bake in the preheated oven for 25 minutes or until the tip of a knife inserted in the center of each muffin comes out clean.
