I know what you may be thinking after looking at the picture of this sandwich. With the amount of ingredients I’ve used to make it, you can hardly categorize it as light. However, it is in fact light in the sense that many of the ingredients are vegetables, and it’s also a lighter version of the Peruvian sanguchon because I’ve used Flatout Flatbread Foldits instead of regular bread to make it. This flatbread is completely different from Peruvian rosetas (crusty rolls used to make all kinds of huge sandwiches called sanguchon due to their size).
These hearty sandwiches would make a fun and satisfying lunch for Father’s Day or Graduation Day. They are very easy to assemble if you have the ingredients ready: store-bought roasted chicken, crispy string potatoes, creamy avocados, lettuce and tomatoes, some mayonnaise with aji amarillo paste or chipotles in adobo (yum!). They will be ready in a few minutes and the only cooking required is frying the eggs.
I’ve also included a chalaquita in this sandwich, which is a finely diced version of our ubiquitous salsa criolla. Adding it is optional, although I personally believe it makes all the difference. If you don’t want to make a chalaquita just skip this step or make a regular salsa criolla instead or any other salsa of your choice. I added colorful peppers to the chalaquita for the sake of color and flavor. This salsa can be made in advance and kept in the fridge for a couple hours in a tightly sealed container. Add hot chili peppers if you want, although it’s not necessary.
When you’re ready to assemble the sandwiches, place the Foldits in a tray or several dishes. Start adding a layer of lettuce, then tomato slices and avocados. Sprinkle with salt and pepper. Add the mayo, roasted chicken, and string potatoes. Top with a fried egg and some chalaquita to finish it off. Fold the bread…and it’s ready! Delicious sanguchones with less calories and less carbs for you to enjoy.
Enjoy with an icy cold beer or a glass of wine.
