Triple -Three Times The Pleasure

TASTY TOMATO, EGG AND AVOCADO ALL-TERRAIN SANDWICH

Triple in Spanish means the same as it does in English. Same word, same meaning. But in Peru, before the concept of “three times something,” a sandwich appears in people’s minds when they hear this word. A Triple for us is a sandwich with three basic ingredients: tomato, avocado, and hard-boiled egg. Sounds simple, even somewhat boring, but if you think this, you better think again.

Elena, a lawyer/Opera singer from Cyprus, was my roommate four years ago in Barcelona, and I remember the day I made her a Triple for the first time. She wasn’t even acquainted all that well with avocado, (I guess they don’t eat them very often in the Mediterranean), but she tried the winning combination once and was converted forever. Four years have passed, we haven’t seen each other in at least three, she’s been living in a little Greek village for a while now, and still, she sends me emails every now and then telling me she made herself a Triple and thought of me with a smile.

Here in Lima every moment is a good excuse for having this popular sandwich: for a snack (as it’s light enough), for lunch or dinner (as it can be filling enough), when you’re on a diet (in this case people usually make it with brown bread, and pass on the mayo).

Triples are great for lunchboxes too, cause they’re not only delicious and extremely satisfying for everyone, including kids, but also easy to make, carry, and eat (qualities shared by most sandwiches). In addition, in every social event, from baby showers to birthday parties, to informal weddings, to formal cocktails, to everything, literally, small to bite sized Triples are served, and hardly anyone resists the temptation of having one, or many.

I don’t know what it is that makes this sandwich so special, I guess the combination just works really well. At home, I make a quick version, just cutting the egg, tomato, and avocado in slices, and putting them between 2 slices of any bread I may have around. When professionally made, the bread used is usually very thin, and a slice is used between every layer. The egg in most cases is chopped, and mixed with mayonnaise, and sometimes the avocado is mashed and maybe mixed with mayo too. To make it healthier, I recommend using good quality whole grain bread, and homemade mayo, or no mayo at all. In shops and restaurants you can find Triples made of different ingredients (but always three obviously!).

Try it. Lazy sundays when you don´t want to cook will never be the same.

Ingredients
  • 2 eggs
  • 1 ripe but firm tomato
  • 1 ripe avocado
  • Mayonnaise
  • 4 -6 slices of white bread (or more, if you find thin bread)
  • Salt and pepper
Instructions
  1. Boil the eggs in a pan of water for 8 minutes. Run the eggs under cold water and peel.
  2. Cut the tomato, avocado and eggs in thin slices.
  3. Spread the mayo on the bread.
  4. Put a layer of each ingredient over the bread, seasoned with salt and pepper. If you want you can separate each layer with a slice of bread.
  5. Enjoy.
