It’s the Friday evening, we’re tired from the long working week, and the sky outside is gray. Do we need better reasons to make ourselves a glass or two of a sweet, colorful, and cheerful Maracuya Sour (passion fruit Pisco Sour)? We don’t think so.
Peruvian maracuyá or passion fruit, has a far more intense flavor than its American counterpart. It is larger, with a yellowish skin, and it is full of acid, fruity and floral flavor. If only the purple variety is at hand, feel free to add ½ or 1 tablespoon lime juice to balance the flavors of this sexy cocktail.

- 4 passion fruits (about 2 ounces juice)
- 1 ounce Pisco
- **1 ounce simple syrup
- 5 ice cubes
- Cut passion fruit in half and scoop the pulp into a strainer over a bowl. Press with a spoon, to separate the juice from the seeds. Measure the juice –you should have 2 ounces- and discard the seeds.
- Process Pisco, passion fruit juice, simple syrup and ice cubes in a blender. Serve in a glass.
- **Note:
- To make simple syrup, combine 1 cup sugar and 1 cup water in a saucepan. Bring to a boil, stirring until dissolved, and simmer for 5 minutes. Cool and store in a jar in the refrigerator. You may buy the commercial cane sugar syrup, if you wish.
