These hearty sandwiches would make a fun and satisfying lunch for Father’s Day or Graduation Day. They are very easy to assemble if you have the ingredients ready: store-bought roasted chicken, crispy string potatoes, creamy avocados, lettuce and tomatoes, some mayonnaise with aji amarillo paste or chipotles in adobo (yum!). They will be ready in a few minutes and the only cooking required is frying the eggs.
I’ve also included a chalaquita in this sandwich, which is a finely diced version of our ubiquitous salsa criolla. Adding it is optional, although I personally believe it makes all the difference. If you don’t want to make a chalaquita just skip this step or make a regular salsa criolla instead or any other salsa of your choice. I added colorful peppers to the chalaquita for the sake of color and flavor. This salsa can be made in advance and kept in the fridge for a couple hours in a tightly sealed container. Add hot chili peppers if you want, although it’s not necessary.

- Lettuce leaves
- 1 tomato, sliced
- 1 avocado, sliced
- Salt and pepper
- Mayonnaise
- 1 roasted chicken breast, shredded
- String potatoes
- 6 fried eggs (sunny side up)
- Chalaquita:
- 1 small red onion, finely diced
- 4 small bell peppers, finely diced
- 2 sprigs cilantro leaves
- Salt and pepper
- Juice of 1 lemon
- 1 tablespoon olive oil
- Place the Foldits in a tray or plates.
- Put a lettuce leaf, tomato slices, and avocado slices on top. Sprinkle with salt and pepper.
- Add mayonnaise.
- Then make a layer of chicken, more mayonnaise, and string potatoes.
- Put a fried egg on top and sprinkle some chalaquita on top.
- Fold the bread and serve immediately.
